Another week has passed and of course as a mother of 4, it’s getting overwhelming to keep things interesting as a working mom. Coming up with what you think should be a good meal for your family. Why should it be so hard? It’s only food right? Well, we all know we as mothers compete with ourselves. Not always admitting it, yes we do like to compete with ourselves. So in conversations we can say and feel good about saying we give our family a 3 course meal.
Really. Why is that something that should keep us going in conversation? First thing we have to do is give ourselves permission to give us a break every now and again in the “cooking” department. With today’s hustle and bustle, it isn’t always easy to give your family the 3 course meal you may want to if you don’t meal prep.
I do think meal prepping is worth its weight for some. It doesn’t always go as planned for some families. Speaking from experience, I don’t always want to set time to meal prep. My weekends have been winding down from a hectic week of moms taxi to employee to wife, etc. I mean when we as moms keep a hectic schedule filled with every other errand for our family and household when do we say enough is enough.
Yes, I may do some of my bulk grocery shopping on the weekend. I do know if maybe we may be having a hectic week ahead of us. So I will head to my new fave place for grocery shopping, Costco. Yes, a big family of 6 I have to think in bulk especially since my kids are getting older. I’m now realizing my boys are eating more and my oldest hasn’t even hit middle school yet. I have a feeling I have to broaden the menu scale. But, until then I am going to milk the easy dinner fixes while I still can.

- Veggie Rotini Pasta Shells
- Flour or Corn Tortillas

With these ingredients in your pantry you could easily grab any of these and make a meal that will not keep you in the kitchen cooking for very long.

- Chicken Quesadillas with Black Beans & Southwest Corn
- Baked Chicken Breast with Veggies & Tater Tots
